in case you didn’t: you gotta cook it until it passes bright green and goes dark green. otherwise it’s too tough. you may still not like it, of course.
No, the kale was fine. It is my tendency to pick a recipe from ‘How to Cook Everything’ and ignore the ingredients I don’t have that is probably to blame.

you’re all insane — kale is, like, the sexiest and most wonderful vegetable on the planet. well, maybe that’s my anemic-vegetarian bias… but i love it.
I recommend less glove in your next dish – they have a tendency to overpower the other ingredients with their strong flavour. If you must have that chewy, rubber experience I recommend a handful of rubber thimbles (say five) or serving the dish with a coulis of bicycle inner tube.
