i remember watching an episode of “good eats” with alton brown where he bad mouths bamboo steamers.
something about them being porous (cross contamination heavens), falling apart and expensive. he ended up making a steamer out of pie tins and cookie cutters (or tuna cans with the top and bottoms removed) in a large stainless steel pot.
but it didnt look as good as a bamboo steamer and presentation is 90% of your iron chef score!

Oh man, the yellow can is nice, but very hard to find. The only place I can reliably find it is the Duane Reade outside of Port Authority, which is probably the closest thing to hell that you can find. Bards will sing of my quests.
