  2. Parakeets know what to do with millet. But that’s about all.

  3. how do you prepare said croquettes? most of the time we fry our plantains in chip form or steam them & serve them with beans & yuca. Hold on i’ll use the googles.

  4. found recipes for millet croquettes but none mentioned plantains as part of the croquette, more like a side dish in addition to the meal. maybe the plantains can substitute the grated carrots, but it seems alot of work to use the millet.

  5. Mark Bittman’s How to Cook Everything Vegetarian, page 558: Bulgur Croquettes with Walnuts.

    Substitute cooked millet for bulgur and make the “with plantains” variation, in short:

    In a bowl combine 3 cups cooked millet, 1 cup chopped green plantains, 1/4 cup flour, half an onion, an egg, 1/3 cup chopped peanuts, and salt, pepper and cayenne pepper to taste.

    Form into small patties (if the mixture is too wet add flour, if it’s too dry add milk). Heat 1/8″ corn/vegetable oil in a skillet on medium heat. Dredge the patties with: first flour, then some whisked egg, then bread crumbs. Fry in batches, 5 to 7 minutes a side or until brown.

    Enjoy with Mr. Bittman’s Basil Dipping Sauce (page 777).

  6. I wish my local library had that option! We only get to renew three times, even if there’s no one–NO ONE–in this whole city who needs a certain book like we need a certain book.

  7. derp! there’s “vegetarian” (ISBN-10: 0764524836) and “vegetarian food” (ISBN-10: 076452514X)… the last one has 144 pages so i’m guessing that aint it. thanks for the recipe, i’m off to the ebays!
